Collagen Protein Cookie Dough Balls
*Gluten Free, Paleo

Ingredients:
½ cup shredded coconut
½ cup almond butter (available at Open Sky)
⅓ cup almond flour
⅓ cup coconut flour (can use all of the same flour- almond or coconut)
2 scoops Whole Body Collagen (available at Open Sky)
¼ cup pure maple syrup (purchase Kraeger’s maple syrup here:)
2 tbsp. Coconut oil
1 tsp. Vanilla
Optional: add dark chocolate chips (I leave ½ plain and add chocolate chips to the other half)

Directions:
Combine shredded coconut, almond flour, coconut flour and Whole Body Collagen in a medium bowl and mix ingredients together. Melt coconut oil, mix in almond butter, pure maple syrup and vanilla. Add to dry ingredients and mix together, add chocolate chips if desired. Roll into balls.

Stuffed Pepper Soup


Ingredients:

1 lb. ground beef
1 large onion
4 bell peppers (any color)
2 cloves garlic, minced
1 (32 oz.) container beef bone broth
1 (28 oz.) can crushed tomatoes
1 (28 oz.) can diced tomatoes (drained)
1 cup uncooked brown rice
2 tbsp. Italian seasoning
1 tbsp. Basil
1 tsp. Garlic powder
1 tsp. Onion powder
Salt and pepper to taste
3 tbsp. Chopped fresh parsley (optional- for garnish)
Sharp cheddar cheese (optional- for serving)

Directions:
1. Chop peppers, combine with bone broth, crushed tomatoes, diced tomatoes, garlic and spices in a large pot. Cover and simmer (about 30-45 minutes) until peppers are tender.
2. Cook brown rice according to package. Add cooked rice to the pot
3. Chop onions and saute with salt and pepper. Add ground beef and cook until brown. Add to the pot.
4. Serve with chopped parsley and cheddar cheese (if desired)
*You can also use a crock pot for this recipe!

Lemon Basil Shrimp over Cauliflower Rice

Ingredients:
2 pounds raw shrimp, peeled and devined
3 tbsp. olive oil
2 lemons, juiced
3 tbsp. dijon mustard
1/2 c. minced fresh basil leaves
2 cloves garlic, minced
1 1/2 c. sliced tomatoes
Head of cauliflower OR 12 oz. frozen bag of riced cauliflower

Directions:
Mix together olive oil, lemon juice, mustard, basil, garlic and season with salt and pepper. Peel and devine shrimp. Pour the mixture over the shrimp and let sit in the refrigerator for one hour. or if using frozen riced cauliflower, heat in a saucepan with avocado or olive oil and salt and pepper to taste.
Transfer shrimp with sauce mixture to a large frying pan on medium-high heat until shrimp are fully cooked. Add sliced tomatoes and cook until warm. Enjoy mixture over the riced cauliflower! Garnish with basil.

Healthy Chocolate Chip Cookie Dough Bites

Ingredients:
1 c. almond flour
⅓ c. oat flour
¼ c. maple syrup
¼ c. melted coconut oil or butter
¼ c. almond butter
2 tsp. Vanilla
Dash sea salt
⅓ c. dark chocolate chips

Directions:
1. Mix all ingredients except for chocolate chips in bowl
2. Fold in chocolate chips
3. Spoon out 12 cookie bites on parchment paper
4. Refrigerate for 20 minutes to set (store in refrigerator)

Tomato Basil Zoodle Summer Salad

Ingredients:
1/4 c. olive oil
2 tbsp. white balsamic vinegar
1  tbsp. fresh basil- chopped, plus more for garnish
1 tsp. garlic powder
2 medium zucchini
2 avocado, cubed
1 c. cherry tomatoes, halved
1/2 c. fresh mozzarella balls

Directions:
1. Whisk oil, vinegar, basil, garlic powder. Season with salt and pepper
2. Using a vegetable spiralizer, cut zucchini lengthwise into noodles
3. Add zucchini noodles (zoodles), avocado, tomatoes and mozzarella to the dressing and toss. Add basil for garnish

Overnight Oats

Ingredients:
1/2 c. whole oats
1/2 c. berries (fresh or frozen- ex. blueberries, raspberries, strawberries, blackberries, etc.)
1 c. milk (cow or goat milk, almond, coconut, hemp or other type of milk)
1 tsp. maple syrup or honey
1 tbsp. ground flaxseed
1/2 tbsp. chia seeds
dash of vanilla
Optional: add nuts (slivered almonds, walnuts, pecans), any other toppings such as coconut flakes
Mix all ingredients in a mason jar or other container, let sit overnight. Enjoy cold or heat up in the morning.
